The phrase ‘New World Wines’ basically means wine houses that grow the same variety of grapes to produce their wine as the country and region of origin. France is the original home for many of the well known red wine grapes however, these French red wine varieties can now be found in the new world for red wines. These include Australian red wine, Italian red wine and New Zealand red wine. The home of Cabernet Sauvignon red wine grape is Bordeaux but now you will find in grown all over the world. Bordeaux is also where the grape used in the production of Merlot originally resided but now it is also at home in Italy and California. Syrah/Shiraz red wine grape started life in the Rhone Valley but travelled to Australia to contribute in their wine processing. The wine grape important to champagne, Pinot Noir, was first nurtured in Burgundy but now New Zealand, Australia and California all play host to this juicy little fruit. There are many experts in red wine sales who bleat on about which red wine matches what food, it can all get a little confusing to the amateur who just wants to sip a tasty little red over a romantic meal. To make it easier, when you buy red wine to accompany food, use the age old rule of red wine for red meat, white wine for fish and white meat. The one big ‘no no’ when selecting wine to have with food is don’t drink dry wine with your chocolate laden sticky sweet, if you do, this will change the taste of the wine completely. How many people believe red wine should be served at room temperature? Apart from the experts, we would all say ‘yes’. This was the case when we weren’t so pampered with central heating systems cranked up to twenty-two degrees however, the idea temperature of a red wine is between fourteen and eighteen degrees C. Pop the bottle in the refrigerator for half an hour before opening to achieve an ideal temperature unless you still live your life by candle light.

What do you do if you have red wine left in the bottle and want to keep it for another day? Ok, so this is highly unlikely for most of us but if you are the one glass sipper, decanting the wine will preserve it for longer, but how many of us have decanters? There are wine vacuum devices on the market that when inserted into the neck of the bottle, the air can be extracted with a pump action. By far the easiest and cheapest way to preserve your red wine for longer is to keep it in the fridge; this will reduce the chemical reactions greatly.
